Ummmm let me just paint a scenario. There's archers spread out across the wall, all on guard mode. There's a flood of swordsmen sallying out from multiple gates. A dispenser wouldn't be able to aim and take them all down.
A new entity like a golem, able to aim and acquire targets would be more realistic than dispensers.
Does the catapult also break blocks?. if not i maby have an idea for that. you can use the block breaking animation for that. the more stones you fire with your catapukt the more it breaks. just an idea jope you like it

Yeah, the movies got this wrong. Minas Tirith had a black outer wall.. Same material as Orthanc. The inner walls, I believe, were white, which was the main colour of the city. It was the outer wall that was black.
They probably didn’t make it black because people who don’t know lore would be like “Why is one of Minas Tiriths walls Black? Black is what Sauron uses.”

Yep, black. That's what I was referring to.
It would be epic tho. It would provide a way around banner protection. Of course, within the realms of no-griefing. But it would make sense such that one doesn't need to run around a fortress removing banners
