Just make an Auroch / Kine of Araw farm. keep 'em breeding.
Once you get it going to around 200 aurochs, kill 1/4th of them, and breed the living ones.
You will always get 25 more aurochs, and eventually get stacks upon stacks of meat. Get some plebs to farm for you, and you'll easily become rich, especially if the server has enchanted weapons with looting.

The problem being that servers do not often like 200 mobs crammed in the same space...

That's how farmers make money- I see nothing wrong with Auroch farms.
(For clarification, i do NOT mean an automated farm like the one mentioned about Barrow-wights, this ain't about 'farming / grinding' in that sense, just regular ol' farming with a sword and a fence.)

Is that for selling to players, or is there really an NPC who will by Auroch products?

Cooked beef and leather can be sold to traders. Horn can be used for quests.
I usually build and mine, so I mostly craft my coins, but I also make a profit of quests.
Funny story there: I was playing in Rhûn, and I was talking to some drunk elves nearby, and a dorwinion dude gave me a quests to get something around 11 green grapes. I raided some drunk elf's crib and stole his grapes, and the quests dude gave me either 200 or 300 coinz. That freaking many! But I'm not complaining ;)
