One thing I have always found confusing is why the Clone/Storm troopers even wear armor, it's not like it stops laser blasts they might as well go into battle wearing civilian clothes. Could anyone explain to me the reason for this?

It absorbs the energy. Same principle as today's combat armor. The hit may knock you out of the fight, but it is practically garraunteed that you will survive.
Wouldn't that mean that it is resistant to lightsabers, then? Seeing as both are made of plasma...

No it has none of the same principles as todays combat armor. A laser simply incinerates through things there is no large amount of force required to send this laser at you unlike a gun, a gun blasts the bullet forth via gunpowder thus making this bullet travel at high velocities with a bunch of force and when the bullet meets resistance (The human body) the force is then distributed throughout the object. While a laser would simply incinerate through the body and meet no resistance thus causing no force to be distributed.
Storm trooper armour disperses heat that wouls otherwise cause burns, and provides a single layer of protection against blasters.
